Ingredients

  • 1 AAA beef tenderloin Fontaine family, approx. 450 g
  • 15 ml (1 tablespoon) toasted sesame seeds
  • 15 ml (1 tablespoon) olive oil

For the marinade

  • 60 ml (1/4 cup) soy sauce
  • 45 ml (3 tablespoons) honey
  • 15 ml (1 tablespoon) lime juice
  • 10 ml (2 teaspoons) sesame oil
  • 10 ml (2 teaspoons) grated ginger

For the crispy vegetable salad

  • 1 carrot, julienned
  • 1 red bell pepper, minced
  • 1/2 English cucumber, julienned
  • 125 ml (1/2 cup) bean sprouts
  • 80 ml (1/3 cup) Asian sesame vinaigrette
  • 30 ml (2 tablespoons) fresh cilantro, chopped

Preparation

  1. In a bowl, combine marinade ingredients.
  2. Pour half the marinade into another bowl. Add tenderloin to this bowl and massage meat, turning a few times to coat well with marinade. Cover and marinate for 1 hour in a refrigerator. Reserve remaining marinade in the refrigerator.
  3. Drain and transfer tenderloin to a platter. Discard marinade. Let meat stand at room temperature for 30 minutes.
  4. To cook, preheat barbecue to 260°C (500°F).
  5. Combine salad ingredients in a salad bowl.
  6. Place tenderloin on hot, oiled barbecue grill. Cook for 1 minute on each side. Remove from barbecue, then slice thinly.
  7. Divide tenderloin slices between four plates. Drizzle with reserved marinade. Garnish with sesame seeds. Serve with salad.
