You know when you have that one dish that just instantly makes you think of home? Well this curry is one of my comfort foods! I remember having it growing up and still love when my mom makes it for us now. But I wanted to figure out how to make it on my own — we all know it never turns out as good as mom’s, but I would say this is pretty close. 🙂

Ingredients

Marinade

  • 2 lbs Fontaine Family Lean Veal Cubes
  • 1 ½ cups plain yogurt
  • 1 tbsp crushed garlic
  • 1 tbsp crushed ginger
  • 1 small green chilli
  • 1/4 cup chopped coriander, divided
  • 1 tsp salt

Curry

  • 2 tbsp oil (any cooking oil)
  • 1 medium onion, finely chopped
  • 1 tbsp crushed garlic
  • 1 tbsp crushed ginger
  • 2 tsp red chilli powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 ½ tsp turmeric
  • 1 ½ tsp salt
  • 1 small tomato, diced
  • 4 medium potatoes, cut into 2 inch cubes
  • 3/4 cup crushed tomatoes
  • 1 cup fresh spinach, chopped

Preparation

  1. In a blender or hand blender, mix all the ingredients for the marinade together, leaving the veal aside. Once everything is well blended, pour the marinade over the veal in a large bowl, cover and set aside.
  2. Chop onions, potatoes, and tomatoes.
  3. Turn your Instant Pot to saute and add in oil and onions. Let onions cook for 2-4 minutes, until they get soft and translucent.
  4. Add in garlic, ginger, and all the spices and mix well. Allow spices to toast a little.
  5. Add in tomatoes and mix well. The juice from the tomatoes will help the dry spices come off from the bottom of the pot.
  6. Once tomatoes start to break down, add in the crushed tomatoes and mix well. ‘
  7. Add in the marinated veal and incorporate everything together.
  8. Cover the Instant Pot and set to manual for 18 minutes.
  9. Once the time is up, allow steam to be released and open the Instant Pot. Check to see if the veal is cooked through.
  10. Add in potatoes and spinach and mix well. Close the lid again and cook on manual for another 4 minutes.
  11. Once the time is done, let the steam out of the Instant Pot and garnish the veal curry with remaining fresh chopped coriander.
  12. Serve with basmati rice and yogurt!
