Making delicious breaded veal cutlet strips whenever you feel like it, is so easy with an air fryer. Make extra and freeze them for when you get a sudden craving.

Ingredients

  • 605 g (1 1/3 lb) Fontaine Family veal cutlets
  • 375 mL (1 1/2 cups) buttermilk
  • Salt and pepper to taste
  • For the breading :
  • 410 mL (1 2/3 cups) all-purpose flour
  • 180 mL (3/4 cup) cornstarch
  • 15 mL (1 tbsp.) paprika
  • 15 mL (1 tbsp.) onion powder
  • 15 mL (1 tablespoon) garlic powder
  • 10 mL (2 tsp.)
  • dried oregano

Two Mustard Dip

  • 125 mL (1/2 cup) 2% plain yogurt
  • 45 mL (3 tbsp.) mayonnaise
  • 5 mL (1 tbsp.) whole-grain mustard
  • 15 mL (1 tbsp.) fresh lemon juice
  • 10 mL (2 tsp.) honey
  • 5 mL (1 tsp.) yellow mustard
  • Salt and pepper to taste

Preparation

  1. Flatten veal cutlets with a meat tenderizer and cut into strips about 2 cm (3/4 inch) wide.
  2. In a bowl, combine veal strips with buttermilk. Cover and marinate in the refrigerator for 1 to 2 hours.
  3. When ready to cook, preheat hot air fryer to 205°C (400°F). In a separate bowl, combine breading ingredients.
  4. Drain veal strips. Season strips with salt and pepper and coat with breading. Dip strips in buttermilk again and drain. Coat again with breadcrumbs.
  5. Place a few veal strips in basket of hot air fryer. Spray with cooking spray. Cook for 8 to 10 minutes. Repeat with remaining strips.
  6. In a bowl, mix plain yogurt with mayonnaise, old-fashioned mustard, fresh lemon juice, honey and yellow mustard. Season with salt and pepper.

Side dishes

Serve the breaded strips with the two-mustard dip.
