Aged Veal Chop Grilled

  • 4 aged veal chops Fontaine Family
  • Extra virgin olive oil as needed
  • Sea salt and black pepper to taste

Aïoli sauce

  • 250 ml (1 cup) mayonnaise
  • 1 clove garlic, minced
  • 10 ml (2 tsp) lemon juice
  • 250 mL (1 cup) red peppers, roasted
  • 15 ml (1 tbsp) maple syrup
  • Sea salt and black pepper to taste


  1. Combine all sauce ingredients in a food processor and blend until smooth. Season to taste.

  2. Brush each chop with olive oil. Season the veal chops with salt and pepper.
  3. Preheat the grill to high heat. Reduce heat to medium and grill the chops for 7 to 9 minutes on each side or until an internal temperature of 61C (140F) is reached.
  4. Let stand for 5 minutes. Cut chops into ¼ inch slices.
  5. Arrange on a wooden board, sprinkle with aïoli sauce and serve.

Side dishes

Serve with a side of grilled vegetables and crumbled goat cheese.

Can be accompanied by a fresh garden pesto or chimichurri sauce.
