Ingredients

  • Fontaine Family Aged Rib Tomahawk
  • Salt
  • Olive oil
  • Ground black pepper

Preparation

  1. Season both sides of the tomahawk with salt. Leave at room temperature for 45 minutes.
  2. Heat a cast-iron skillet with oil to high, and preheat the oven to 175°C (350°F).
  3. Sprinkle both sides of the tomahawk with black pepper. In the hot skillet, sear the rib chop on all (4) sides for 2 to 3 minutes until a golden crust forms.
  4. Wrap exposed bone with a damp paper towel and secure it with aluminum foil. This will prevent the bone from burning.
  5. Place the prime rib in a large pan and transfer to the middle rack of the oven. Cook for 30 to 40 minutes or until a meat thermometer reaches the temperature of your preferred doneness (Cooking Tips).
  6. Remove pan from the oven when desired doneness is reached and cover with aluminum foil. Let stand for 5 to 10 minutes before slicing.
